Cucumber Raita
1 large cucumber
salt
2 cloves garlic
1/2 lemon
1 cup yogurt
Peel and seed the cucumber. Grate it and place it in a colander
with a few sprinkles of salt. Leave for half an hour. Mix yogurt,
minced garlic (you can skip this if you wish) and the juice from
half a lemon. Squeeze water from the cucumber and add it to the
yogurt. Great with spicy foods like curries.
