1/3 cup sugar
1/3 cup wine vinegar
1 bay leaf
1 tsp salt
1 tsp whole mixed pickling spices
2 4oz whole mushrooms, drained
1 2oz sliced pimentos
1/4 cup sliced seet onions, broken into rings
1/2 teaspoon minced garlic
In a saucepan, combine sugar, vinegar, bay leaf, salt and spices--bring to a boil. Stir until sugar dissolves. Pour over combined mushrooms, pimento, onion, garlic. Allow to marinate several days in refrigerator. Keeps indefinitely in refrigerator.
