Yam Extravaganza

On occasion there has simply been no time to cook much of anything for our Friday night events. In a pinch I have resorted to nothing more elaborate than filling my oven with as many yams as it will hold and baking them till they are soft and sweet. They may not be too attractive but they are delicious and always well received. If you have any leftovers, try adding them to pancake batter, bread dough or just eat them plain in all their squishy glory. If you have a baby to feed, nothing could be better, especially mashed with a little banana.
