This simple dish can easily be multiplied to feed the masses. Its success will depend in part on finding or making a flavorful spice blend. Feel free to add other vegetables, dried fruits or nuts to make this uniquely your own.

Curried Rice

Saute onion and carrots lightly in butter. Add apple, ginger and curry powder. When curry powder becomes fragrant, add rice and stir until opaque. Add any liquid of your choice, bring to a boil, cover and simmer on very low heat for about 45 minutes. When stock has been completely absorbed, add chicken, peas and raisins and heat through. Serve with Cucumber Raita.
